The Podkarpackie region is a paradise for food lovers. The regional cuisine, which is based on natural products, contains a mixture of the flavours of the multicultural borderland, and contains refined dishes once common in the manorial houses as well as simple foods of the Lasowiacy people and Wallachian shepherds. There are dishes linked to Jewish, Austrian, Hungarian and Armenian cuisines. Over 200 original dishes and foods from the region are registered on the List of Traditional Products of the Ministry of Agriculture and Rural Development.
The List contains such exotic names as bulwiok from Futoma, Lemko-style fuczki, zrazy made of lamb meat, maczki made from goose meat, as well as Rzeszów-style wedding day kołacz. There are also the Podkarpackie-style olives, i.e., pickled cornelian cherry, as well as gomułki cheese and the famous proziak bread rolls made from flour and sour milk. Other local products include Lubaczów-style honey, Krzeszów-style plum butter, smoked sausages and hams, as well as goat cheese.
You can try these at regional food festivals, in restaurants, pubs, inns, and in agritourism farms. Chefs frequently use iconic recipes from the past, knowing that the philosophy of slow food is not only represented by French-style sous-vide duck dishes, but also by a slice of wholemeal bread baked on a cabbage leaf, or pamułka soup made from berries picked in the local forest as well as many other traditional dishes made from the crops produced in small, organic farms. Many of these exist in the Podkarpackie countryside, along with apiaries, small dairy farms and fish ponds. In this region, where large areas are covered with forests, you can also taste venison dishes in some places.
Dishes made from products supplied by local producers have a unique taste and fine quality. These are trademarks of the restaurants in Rzeszów and the guesthouses in the Bieszczady mountains.
